Staple sauce of 2020. Made two batches, good on everything. Not ultra hot, great citrus flavor.
3c peppers and garlic
1 medium pineapple, roasted
2c white vinegar
1c fermenting water
1.5 tsp salt
1 tsp coriander or cumin
2 tbsp lemon juice
Blend for 1 minute
Simmer for 10 minutes
Add 1c fermenting water
Strain half
Immersion blend for few minutes
pH 2.3
Ferment was ~50 peppers and 20 cloves garlic for 3.5 weeks saran top onion cap
